someone asked for cranberry recipes...here's a couple:
CRANBERRY-APPLE COOKIES
1/2 cup butter
1 cup brown sugar
3/4 cup sugar
1 egg
1/4 cup milk
2 cups flour
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. grated orange rind
1 1/2 cups apples, pared and chopped
1 cup cranberries, chopped
(1) Preheat oven to 375 degrees.
(2) Cream butter and sugars; beat in egg and milk.
(3) Sift together flour, baking powder, cinnamon, and salt. Stir into
butter mixture until well blended.
(4) Stir in orange rind, apple, and cranberries. Drop onto baking
sheets.
(5) Bake for 12-15 minutes at 375 degrees.
(Makes 4 dozen)
NOTE:
Don't store these in a cookie jar: they will get too mushy.
Cranberry Button Cookies
2 cups flour
1 teaspoon baking soda
1/2 teaspoon gbround ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3 cups quick cooking oats
1 cup shortening
1 1/2 cups fresh cranberries, ground
1 1/2 cups firmly packed brown sugar
Combine flour, baking soda, ginger, nutmeg, salt and oats.
Cut in shortening until particles are very fine.
Add cranberries and brown sugar. Mix until well blended. Chill 1 hour.
Roll out dough to 1/4 inch thickness and cut into 3-inch rounds.
Bake on greased cookie sheets at 375 degrees for 12 to 15 minutes or
until lightly browned. Cool on rack.
Cranberry Refrigerator Slices
4 1/4 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons salt
1/2 teaspoon cinnamon
1 cup white sugar
1 cup brown sugar
1 1/2 cups margarine
2 eggs
1 1/2 teaspoons almond extract
1 1/2 cups ground nuts
1 1/2 cups ground cranberries
Sift together flour, baking powder, baking soda, salt and cinnamon.
Cream together sugars, margarine, eggs and extract thoroughly. By hand,
fold in flour mixture thoroughly. Add nuts and cranberries, mixing well.
Shape into long rolls. Wrap in wax paper. Chill overnight.
Cut into 1/8 inch slices. Place on ungreased cookie sheets. Bake at 375
degrees 10-12 minutes. Cool on wire rack. Makes about 7 dozen cookies.
